Until recently, health care facilities have each had their own policies and definitions of dietary levels and textures. Such deviations carry high risks for clients and patients who have dysphagia. For these reasons, an international team of professionals has worked through much research and testing protocols to develop the International Dysphagia Diet Standardization Initiative (IDDSI). The protocols of this initiative include accessible testing methods and terminology that works in any part of the world and were created to be applicable for people of all ages and all cultures. This course will initially share some of the key research behind IDDSI to share the rationales and science supporting each level's definition. Then the IDDSI framework will be shared to include the description and testing methods for each level, along with the resources available from the IDDSI website. Suggested steps for implementation will be shared, based on multiple hospital and health care facility recommendations, followed by troubleshooting plans and helpful suggestions.

1. Identifying Key Research Concepts That Support the Rationales of Each IDDSI Level

Initially this chapter will review the substantial need for standardized diet levels that will be used in all settings, for all ages, with all cultures. Then research will be shared that supports the rationales behind determinations for each of the IDDSI levels for both children and adults with dysphagia.

2. Describing the Recommended Steps to Implementing IDDSI in a Health Care Facility

This chapter will share suggested implementation steps for a facility’s IDDSI rollout. Consideration will be given to the recommended steps from the IDDSI team, as well as examples from a variety of health care facilities.

3. Troubleshooting Final Obstacles: Sharing Suggestions and Final Steps

This chapter will review obstacles that have been reported by different dietary departments while implementing IDDSI in their hospital or other health care facility. Respective solutions will be shared, as well as other ideas and suggestions to help decrease additional challenges.
